CROCKPOT RATATOUILLE NICOISE

1 med. eggplant
2 lb. fresh tomatoes
2 med. zucchini
3 meaty green peppers
1/2 c. olive oil
1 garlic clove
Salt and pepper to taste
Cut all vegetables in thin slices. Do not peel. Heat oil in large heavy fry pan. When oil is hot, brown vegetables very rapidly in 4 or 5 batches. Place vegetables in crockpot as browned then brown chopped garlic clove in oil very quickly. Pour oil over vegetables and season with salt and pepper. Cover and cook on high 2 hours.

CROCKPOT POTATOES

8-10 med. to lg. potatoes, peeled and sliced thin
2 onions, peeled and sliced thin
Salt and pepper to taste
1 c. grated American or Cheddar cheese OR
1 can Cheddar cheese soup
Paprika
1 can cream of mushroom soup
Layer one half the potatoes in bottom of crockpot and sprinkle with salt and pepper. Put cheese or cheese soup on top of this layer. Add one half of onions, remainder of potatoes, then remainder of onions, salt and pepper. Spoon undiluted cream of mushroom soup on top. Sprinkle with paprika. Turn crockpot on low for 8 to 10 hours or on high for 4 hours.

CROCKPOT POTATOES

2 lb. hashbrowns
1 lg. can evaporated milk
2 cans cream of mushroom soup
2 cans Cheddar cheese soup
1 can French fried onions
Put in greased crockpot and bake all day on low heat (about 6 hours).

HONEY RIBS AND RICE - CROCKPOT

2 lbs. lean spare ribs
1 can condensed beef bouillon
1/2 c. water
2 tbsp. maple syrup
2 tbsp. honey
3 tbsp. soy sauce
2 tbsp. barbecue sauce
1/2 tsp. dry mustard

Bake ribs at 350 degrees for 1 hour (1/2 hour per side) or broil for 15 to 20 minutes to remove fat. Cut into single servings. Combine ingredients in crockpot, stir to mix. Add ribs. Cover and cook overnight or on low for 8 hours. Serve over rice.

HAM AND CHEESE POTATO IN CROCKPOT

6 slices cooked ham
6 potatoes, peeled & sliced
1 lg. onion, sliced
1 can Campbell Cheddar cheese soup, undiluted
1 pkg. scallop potato seasoning
1 c. warm water

Slice potatoes in bowl and cup of water and 1/4 teaspoon cream of tartar. (This prevents potatoes from turning brown.) Cover, shake then drain. Line crockpot with a layer of potatoes, onions, then ham, repeat until ingredients are used. Mix scallop mixture with warm water, until dissolved. Pour over potatoes and ham. Spread soup over the top evenly. Cook on low approximately 6-8 hours or until desired tenderness.

E-Z BEEF STROGANOFF (Crockpot)

1 - 1 1/2 lbs. stew beef cubes
Seasoned salt (optional)
1/8 tsp. pepper
1/4 tsp. onion powder
1/4 tsp. garlic powder
1 pkg. onion soup mix
1 can cream of mushroom soup
2 tbsp. water
Cooked noodles or rice for serving

Brown beef cubes, seasoning while browning with seasoned salt, pepper, onion powder and garlic powder (to taste). Place beef in crockpot. Add 1/3 package onion soup mix and can of soup, undiluted. Stir until all beef cubes are thoroughly coated. Add 2 tablespoons water. Stir again. Cover and cook on low setting 6-8 hours on low. Serve with cooked noodles or rice.

EASY CROCKPOT BARBECUE

3 to 4 lbs. pork roast
1 lg. onion
8 to 10 whole cloves, sliced
Your favorite barbecue sauce

Before you go to bed, brown pork roast in skillet with a small amount of oil. Peel and slice 1 large onion. Place 1/2 onion in bottom of crockpot. Put roast in crockpot and add 1/2 to 3/4 cup water. Add rest of onion and cloves. Set on low. In morning, turn off crockpot, remove meat, and let cool. Discard onion and juices in crockpot. Tear roast into small pieces. Put back in crockpot and add barbecue sauce (enough until juicy). Cook on low 2 to 3 hours or until flavor is blended and hot. Serve on buns.

DIET VEGETABLE IN CROCKPOT

1 cabbage
1 c. broccoli
1 c. garbanzo beans
1 bunch celery
6 carrots
1 onion in lg. pieces
1 pkg. dried onion soup
Any extra vegetable you want
1 lg. can V8

Put all ingredients in crockpot on low. Cook all day and serve.

DAD'S CROCKPOT BEAN SOUP

1 pkg. navy beans
1 ham bone
1 onion, chopped
Boiling water

Pour dried beans, ham bone and onion in crockpot. Cover with boiling water. Turn crockpot on low and cook all day. Remove bones. Share with a friend!

CROCKPOT TACO DIP

1 lb. Velveeta cheese
1/2 lb. sausage
1/2 lb. hamburger
1 can cream of mushroom soup
1 bottle Ortega taco sauce
Tortilla chips

Brown meat. Drain. Put all ingredients in crockpot and cook on high until melted. Stir frequently. Serve with chips.

CROCKPOT ZUCCHINI

6 c. zucchini thinly sliced
1/2 c. chopped onion
1 c. shredded carrots
1 can cream of chicken soup
1 c. sour cream
1/4 c. flour
1 (8 oz.) stuffing crumbs
1/2 c. butter

Combine zucchini, onions, carrots, and soup. Combine sour cream and flour and stir into vegetables. Toss crumbs and butter.

Put half crumbs on bottom of crockpot, then vegetables; put remainder of crumbs on top. Cook on low for 7 hours.

CROCKPOT VENISON STEW

1 3-5 lb. tenderloin or shoulder, cubed
1/4 c. oil
1/4 tsp. pepper
3 cloves garlic, chopped
1 pkg. onion soup mix, dry
1 can cream of celery soup
1 can golden mushroom soup
1 c. water
4 med. size potatoes, cubed
6 carrots, sliced
1 med. onion, quartered

Pour oil in pan and set on medium heat. Sprinkle pepper, garlic on meat and brown on all sides (lightly brown - quickly). Combine soups and water and pour over meat in crockpot. Add onions, carrots, and potatoes. Simmer 3 hours or until done.

CROCKPOT SWISS STEAK

2 lbs. round steak
1 lg. onion, sliced
1 (16 oz.) can tomatoes
1 green pepper, sliced
Salt and pepper

Cut round steak into serving pieces; season with salt and pepper and place in crockpot. Add onions, green peppers, and then tomatoes over all. Cover and cook on low 8 to 10 hours.

OLD FASHIONED CROCKPOT APPLE BUTTER

14 cooking apples (Winesap)
2 1/2 c. sugar
1 c. apple juice
1 tbsp. cinnamon
1 tbsp. cloves
1 tsp. Allspice

Wash and core apples; cut in 1/4 pieces. Slightly grease crockpot, put in apples and apple juice. Cook on high for 5 hours. Add other ingredients and cook for 6 hours on high. Stir each hour. Pack in 1/2 pint jars and seal. Makes 5 (1/2 pint) jars.

CROCKPOT CASSEROLE

1 lb. ground beef
4 lg. potatoes (diced)
1 can green beans
1 can mushroom soup
1 can Cheddar cheese soup

Brown ground beef, drain grease off and add to crockpot. Dice potatoes and add. Add remaining ingredients and cook overnight on low heat in crockpot.

CROCKPOT BURGUNDY BEEF

2 lbs. cubed lean beef
2 pkg. dry onion soup mix
2 can (10 3/4 oz.) Golden mushroom soup (undiluted)
2 can (4 oz.) mushrooms
1 c. red cooking wine

Combine all ingredients in crockpot and cook on low for several hours. (This is good meal to start in the morning and forget about) or cook in covered dish for 3 hours in 300 degree oven. Serve over rice or noodles.

CROCKPOT BRUNSWICK STEW

3 (6 3/4 oz.) cans chunk chicken
1 lb. ground beef
1 onion, chopped
2 cans tomatoes
2 cans cream style corn
3 tbsp. Worcestershire sauce
10 oz. ketchup
Dash of lemon juice

Brown ground beef and onion; drain well. Mix with other ingredients and cook overnight in crockpot on low heat. Stir occasionally. Serve with rice.

NOTE: In a 3 quart crockpot, you may have to leave out some of the juice from tomatoes or it will run over. usually, when making this stew, I cook a 3 pound chicken and remove meat from bones (instead of the more expensive canned chicken). Also I substitute ground turkey for the ground beef. Even with these changes, this is a prize winning recipe.
